After a brief introduction on historical background by the guide, the gastronomic tour begins with the cold phase, where fresh meat is processed.
It is then explained how the best meats are chosen for Parma ham processing.
Following this, it is possible to see the machinery used for salting and the refrigeration cells.
Then we move on to the hot phase, with a visit to the curing rooms, characterized by the typical scents of the ham.
During curing, the "tapping" that leads to branding by the Consortium with the famous "crown" of Parma ham will be explained.
At the end of the visit there will be a tasting of Parma ham aged 24 months, accompanied by homemade bread and sparkling wine from the Parma hills.
