Tour of the Dairy and Ham Factory with Tasting
Prosciutto di Parma and Parmigiano Reggiano, two of the many foods that characterize Italian cuisine.

The tour starts in the dairy, from the local "casello" inside which the milk is cooked in the so-called "caldere" from which the wheels of Parmigiano Reggiano are then extracted.
It will be possible to visit the brine room and the maturing warehouse inside which you will try to "beat" Parmigiano Reggiano as the Consortium's experts do.
At the end of the food tour there will be a tasting of Parmigiano Reggiano of different ages accompanied by balsamic vinegar and local sparkling wine.
The second stop is the ham factory, where Parma ham is made.
The visit will start from the rooms where the fresh pork is processed and where only the best legs are selected for Parma crudo.
It then continues in the curing cellars where the "sugnatura" will be explained and where Parma hams will be "tapped" in the presence of visitors to discover their aromas and evaluate their goodness.
At the end, tasting of 24-month aged ham with homemade bread, wine from the hills and then back to the city
