We use seasonal and local foods. In every recipe at least one ingredient is harvested by us in the wild or in the garden, among them numerous herbs, fruits, flowers and vegetables...
Our tasting menus of the day traverse history by following nature and the rhythm of the seasons. They are inspired by tradition flowing into design and spring from the passion for research and creation that continually moves everything.
You may happen upon the season of wild strawberries or blackberries, as well as the season of mushrooms, the season of marigold blossom or the season of ripening dogwoods or rosehip berries...you just have to trust us!
